Ingredients

4 ripe bananas
1/2 - 1 sliced banana to go on top, optional
1 & 1/2 cups plain flour
a pinch of cinnamon
a pinch of nutmeg
a pinch of sea salt
1 & 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup brown sugar
1/4 cup melted coconut oil
3 tablespoons chopped walnuts

Remember my Vegan Banana Bread Smoothie recipe? Well, in that, I said I was going to post my banana bread recipe next… whoops! 🙊 I’ve only just gotten around to it – but hey, I posted some other pretty delicious recipes in the meantime.

This banana bread is so, so tasty – and 100% Vegan friendly! It uses coconut oil instead of dairy, and I believe it makes it so much more moist and the perfect texture. Coconut oil can be a little expensive, but this recipe only calls for 1/4 cup – and it has so many other uses! I get an organic coconut oil by Spiral Foods that’s available at my local supermarket – it’s similar to this one.

You can replace the walnuts with whatever you like – chocolate chips, oats, etc… I haven’t tried it with either (yet) but I’m sure it would be just as delicious, and I intend to try it soon.

Preheat your oven to 180 degrees Celsius, and grease your loaf pan.

In a medium bowl, mash bananas until there are no big lumps. Add brown sugar and melted coconut oil, and combine.

In another bowl, sift the flour, nutmeg, cinnamon, sea salt, baking soda, and baking powder and then fold these into the mashed banana mixture until just combined. Then add your chopped walnuts and mix.

Pour the batter into the greased loaf pan and top with sliced banana (optional).

Bake for approx half an hour, or when a skewer/tooth pick comes out clean.

Serve warm, or store in an air tight container. Enjoy!
