Ingredients

Adjust Servings:
1 kg tater tots
1 tablespoon olive oil
30 grams taco seasoning or 1 sachet/packet
1 diced red onion
1 diced tomato
4 diced spring onions
200 grams corn kernels
200 grams four bean mix or just your favourite beans
2 teaspoons lime juice
1 cup shredded cheddar cheese
300 grams salsa
1 mashed avocado
1 cup sour cream

    Okay, so we all like nachos, right? They’re quick and convenient, and so easy to make! Today, after browsing my freezer for something to make for lunch, I decided to try something new: which is how I came up with Tachos (nachos x tater tots!)

    You can add whatever toppings you like, but I think I have a pretty unbeatable combination. It’s super simple, and absolutely delicious – and filling! Coat the potato gems in taco seasoning, and while they cook dice your vegetables and add in corn kernels, beans, and a squeeze of lime juice. Top the tots with cheese, salsa, the vege mix, avocado, and sour cream… And then try to pace yourself because these bad boys are addictive!

    Preheat oven to 220 degrees celsius. Place the tater tots in a large mixing bowl, and drizzle with olive oil. Toss tater tots to spread the oil. Add taco seasoning, and continue to toss so all tots are covered.

    Place tots on baking tray (make sure they are not stacked on top of each other - I used 2 trays to prevent this) and cook in oven for 20-25 minutes - they should be golden and crispy.

    While the tots are cooking, combine the onion, tomato, spring onions, corn kernels and beans in a mixing bowl. Add lime juice and mix.

    Once the tots are cooked, place them in your serving dish of choice (unless it's not microwaveable). Add cheese, then pop into microwave for 2 minutes to melt the cheese. Add salsa, avocado, the vege combo, and sour cream. Serve & enjoy!
